A 95th Birthday & Rainy Day Sweet and Savory Red Lentil Soup

This is so simple and flavorful...
1 large yellow onion, chopped
2 cloves garlic, peeled and thinly sliced
Saute both in olive oil until caramelized and very sweet (40 minutes to an hour). Add three cups of raw chopped spinach. Add 1 package of dry red lentils (2 cups), 1 can of organic lite (low fat) coconut milk, and three cups of water. Let it all boil together; ignore it; eat it later...
