Gong Xi Fa Cai

and then some...so, it is now the year of the rabbit.
OK, but what a day for the mom. We spent this rainy afternoon making delicious dumplings to celebrate Chinese New Year. We made these gluten free dumplings wrapped in rice paper.
For the filling we used:
fresh minced ginger
shredded cabbage (which Luke did on the mandolin)
water chestnuts (chopped by Susannah)
chopped leeks
sweet potatoes
For the sauce, we mixed:
soy sauce
water
maple syrup (just a drop)
ginger scallions
sesame seeds
And then, in a lapse of responsibility, I let these persuasive children talk me into frying them in coconut oil. I saved a few to gently steam but the lightly fried ones were pretty amazing I must admit. Wow, so much for my two hours of spin classes this morning...
