Peanut Butter Truffles

So, after today's Sherwood Easter egg hunt, yes the typical kind with artificial color galore, we stumbled into a conversation and learned this recipe. My friend, John Elion makes this for his son so we rushed home to try it. We started with crunchy Maranatha organic peanut butter. It was in the refrigerator and I had poured the oil off the top when I opened it so it turned out to be very malleable. We dumped Amazing Grass Kidz Superfood (21 calories in a packet of this chocolate powder drink blend of whole plant foods (greens, orange / yellow / reds / blues and purples)) onto a plate. We took a teaspoonful of peanut butter and rolled it into a ball and coated it with Amazing Grass. So, the kids took over making a few themselves and we all had some, delicious. The creator of the recipe said he freezes these for his son, but the refrigerated peanut butter was cool enough for them to hold their shape well. This project seemed to more than make up for my being the mean mom who made them trade in the colorful little plastic wrapped candies for cute little notebooks at the hunt...

  1. Mmmm I had a midwife who used to make these for all the pregnant mommys as a healthy snack alternative. She mixed protein powder and honey in or agave, then rolled in coconut. So sometimes they had chocolate protein in them and it was so good! Kristy from www.apronsandapples.blogspot.com
