So, yes, I dare say I did cheat a little but I like a dinner that can be put together quickly when we get home. I started out with a packaged dry mix of falafel (completely natural and healthy with chick pea flour, lentil flour, fava bean flour and spices.) I added additional chick pea flour to decrease the saltiness and 2 cups of ground cooked broccoli for the sake of a vegetable. They came out green and pretty and very spicy and tasty too.
I pictured the ramps because they are so lovely but I was tempted to add them and did not. I am getting the feeling my children (and my readers) are ramped out just in time for the season to come to an end.

ReplyDeleteI had cold broccoli leftover and grated it well in the blender. Then, I mixed the chick pea flour into the falafel mix really well. Next, I added the broccoli and stirred it in completely. Then I did add water, the amount specified in the directions, adjusted a little for the added flour. If my broccoli had been wet, I would have used less. Then, we lightly fried them in a mixture of coconut oil and olive oil over medium heat browning both sides easily. These are great with cauliflower too.
