Healthy Icy Confections

The dessert I made and forgot to serve last night:
1 cup peanut butter
1 cup cashews
1 cup pitted dates
Blend really well, add a little water if you can not get mixture to blend. Then, spread onto casserole dish and press mixture down, smoothing top. Last night I put it in the freezer to have a frozen confection but it never crossed my mind to get it out and serve it. Oops.
Coconut Lime Popsicles:
I have a lot of fresh limes right now and saw young coconuts at Whole Foods. It is so simple to blend the coconut meat, fresh squeezed lime juice and some of the coconut water to get a creamy delicious popsicle. Just pour it in the molds and freeze.
Frozen Health Treat:
Blend 2 cucumbers, 1 cup basil, 1 cup strawberries, 1 cup other berries. Pour into popsicle molds and freeze.
Coconut Cherry Ice Cream:
3 young coconuts
3 cups black cherries, pitted
Scoop out coconut meat, blend it with the cherries, add a little coconut water, just enough to make it blend easily. Freeze in small containers.
