Lizzie's chopped salad
Everyone chose their own selections for today's farm fresh lunch salads.  I took a picture of Lizzie's beautiful chopped salad of cucumber, peppers and peaches.  It was delicious looking and Lizzie is saying right now she is not guest blogging so if I want to write about her salad I am on my own.

Fresh from the Vero Beach farmer's market
Luke asked for a big bunch of my watercress,, then decided he did not like it (it was really strong!).  Perry had only micro greens and peppers, Susannah had big chunks of peach in hers instead of small diced pieces...

The very friendly farmer gave me about six or seven peppers and two tomatoes after I had bought a bunch so we really have red and yellow pepper galore here...I was thinking, gee I am on my bike, please stop being so generous but it worked itself out.  After buying a lot of peaches, all I had to do was pop open a bag of hummus chips because the air in the bag takes up too much room.

My salad was by far the best!!! I always say that but obviously mine appeals, well, it appeals to me.  My salad had fresh farmy strong lettuce, packaged romaine and mesclun, baby kale and micro greens, watercress, cucumbers and some of the red pepper.  I am looking for my spicy habanero olives and if I find them in this mess of a refrigerator I will add them.  Plus, I am sprinkling a touch of oregano a squeeze of lemon and some balsamic vinegar.  Maybe a splash of olive oil...organic from Spain.
