Black Bean Burgers for a Summer Lunch

These black bean burgers were easy and delicious and as the ultimate compliment, Lizzie Zimmerman said, mom, I thought they were from a package.  (She is down on homemade...and all about whatever packaged food comes her way:))  I had boiled dried black beans the day before for walking tacos so I had them all ready to go with some leftover cooked broccoli..  I sautéed onions and carrots (chopped very small). Then, I put chives, cilantro, the onion carrot mixture and the beans and broccoli in the very high powered blender and mixed well leaving some small chunks and some whole beans. Then, we formed the mixture into patties and put them on a cookie sheet greased with olive oil and baked for about 10 minutes on each side, broiling for a minute at the end...in all, a lot of clean up but a pretty tasty summer time meal, especially because the kids got to use the coveted ketchup, mustard and relish that comes out about two or three times a year...

We served the black bean burgers with what we call barbecue slaw, it was simple because I cheated and bought organic shredded cabbage and added Annie's organic barbecue sauce, original flavor.  While this is absurdly easy, I think it is a legitimate way to get my kids to eat cabbage, a high anitioxidant cruciferous vegetable...
