Farmer's Market Salad and Chef Luke's Herbed Tortilla

Easy healthy lunch today...yes, we had it early.  I made a big vegetable juice because Susannah is talking me into a Baltimore fancy lunch and we will be celebrating Perry's last day of physical therapy at KK as she will graduate to some kind of NYC regular PT sessions when we get back home.

So, this salad was simple and cut into big chunks. We skipped the lettuce so it was just simple and easy. Some of the kids used dressing (basic olive oil and balsamic vinegar) while Perry dipped the chunks in curry hummus by The Wild Pea, so tasty.  It is the season for local red onions, tomatoes, cucumbers, basil and carrots and they taste so much stronger and earthier than the off season Whole Foods versions and we were lucky to buy them the day they were picked.

Luke then made a brown rice tortilla topped with chives, cilantro, mint and olive oil...he makes a very tasty version of this and the whole house smells so good...but I am trying not to dive into it, saving my appetite for some kind of late lunch.  Perry made a curry hummus tortilla with red onion and that is also smelling yummy and looking good...

My only hope now is that they will clean all these baking sheets.  And, why, oh why, is Lizzie just having peanut butter on hers? Uggggghhhhh.....
