
My recipe was:
1 can of back beans
about half a cup of cocoa powder
2 flax eggs(flax meal, water)
1 tablespoon of coconut oil
A touch of maple syrup
I mixed it all together as instructed and put it in a pan to bake. The recipe I was more or less following said to bake it for 20 minutes, but after 30 mine still wasn't baked at all. We ended up eating it as pudding and it was really good. I thought it was one of my best fails yet, and apparently so did my parents. Luke also liked it, but Lizzie and Susannah didn't as much. I found it to be really good on strawberries, and with nuts in it. My mom walked in from her daily bike ride and went right to the pan to try it. She ate the whole thing. I had already refrigerated my portion of it to see if that would turn it into a more puddingy texture. It already was really smooth, but pudding is usually cold so I thought that would make it even better. When my mom came home from the pool for tennis she had found out that I had some in the fridge so she went right to it. She ended up eating half of what was left. I brought the other half to tennis and ate it as a late afternoon snack. Just because something doesn't turn out as you expected it doesn't mean it isn't good. This was AMAZING tasting.

I am not a big pig! When I originally had what was left in the baking dish, it was quite small and creamy, smooth and addictive. And when I made the miraculous discovery later that there was a small dish of it with pecans in it, I had just a very reasonable serving. Thank you to Perry Z. for this inspiring guest blog item.
